I hope all is well, The short answer is "YES".
This can be done EITHER via the report center GUI, or PowerShell.

Look at the second link I sent you, The section titled: "Interpret the email activity report" In the numbered breakdown/explanation of the items in the table, look at #7: "The table shows you a breakdown of the email activities at the per-user level. This shows all users that have an Exchange product assigned to them and their email activities. You can add additional columns to the table..."
To schedule the report to be run and delivered, take a look at the following:

If the option for this particular report to be scheduled exits in the GUI, then the above link shows you how to. If it is not able to be scheduled via the GUI, then you would need to use PowerShell to script the creation and delivery of the report and have the script run against the O365 tenant at whatever interval you want.
