I run a Plex server at home and was wondering what format the videos are in if I get the annual subscription that allows me to download the video files and how compatible those files will be with Plex (e.g. do they contain good metadata? will they be easy for the device to stream to other devices?).

We don't have an "official" stance on Plex, but I use it myself so I wanted to follow up on this real quick. All of our videos will work fine with Plex, however we do not currently insert metadata in them. The videos will import but without proper names and with no box art. We are looking for a solution to this, but metadata causes a problem with the HLS streams we use for iOS device support. So the only solution as of now would be for us to maintain two sets of video files: one for streaming and one for downloads. We are working on a new system to automate that process, but I do not have a time-frame for its completion.
Aside from that, you will not have any issues. Our downloadable videos are MP4 files using the H.264 video codec and the AAC audio codec which makes them compatible with almost every device out there.

Hi I was able to get this to work properly. What i did was to place them into plex as a tv show and followed this naming convention (Show Title) - (s01e**) - (Show Title) . setting it like this and having them in a seperate folder for each show and and placeing each show into plex independently seemed to work for me without any issues.
