You covered in the last Google Apps video chrome settings... I would guess then that there is a means to FORCE the use of Google Chrome by the users so that any restricting POLICIES would take effect? If so, how is that enforced?

Google doesn't provide a policy specifically for that. Instead, you would need to rely on your client operating system policies. For example, in Windows you can use a GPO and AppLocker to restrict running web browsers other than the Chrome for Work deployment containing your Google Apps policy. In OS/X you can use the Profile Manager that comes with OS/X Server to restrict browsers like Safari from running, and only allow Chrome. Profile Manager will also take care of iOS devices like the iPhone and iPad also. It gets a little trickier when it comes to Windows Phone and Android devices as they don't typically provide for a consistent management methodology.
