Wow, just passed MS-100 with 700. I probably spend half my work hours in 365. Watched all the videos. Was getting mid 80's on Kaplan exams. Felt like they skipped all the places I was strongest and asked about all the things I rarely (if ever) do. There was WAY more on Azure AD Connect and closely related topics than I was expecting. I got way more than enough time. I doubt anyone will run out of time on that test. Not nearly as much powershell as I expected either. They seemed more interested in Azure AD (and it's admin role names and powershell commands) than the Microsoft 365 admin center (and it's version of role names and powershell commands).
I took the test from work with remote proctoring. First try I had to reschedule because proctors couldn't see me through the web cam. It turns out that our UTM was denying some port 80 traffic due to "HTTP Invalid Request-Line format." Had to create a new vlan with absolutely no filtering or proxying for the online proctoring to work.
Hope that helps someone. Time to start studying for the next exam.
