Hi - just wondered if there were any plans to add a Windows Server 2019 VM to any of the virtual labs? Currently looking to spin up a W2K19 svr to check-out some 2019 specific features.

I'm not aware of any Practice Labs that are using Windows Server 2019. They build their labs based on Microsoft exam objective, and currently none of them call for Windows Server 2019.
I would recommend taking advantage of the Microsoft Evaluation Center.

If you can run a VM locally, you can download an ISO or a VHD. You can also create a VM in Azure, with an existing subscription or by starting a free trial.
