There was a 70-583 Exchange course and it is no longer being offered. I saw the online version, but I am not sure if it is the same content.

Hmmmm - 70-583 shows up as a retired Azure course/exam - not Exchange.

Here is the Exchange exam. Note that this will retire early next year. It will be fun to see what Microsoft has planned for the new certs involving Exchange.

The new examinations and courses for the Exchange are MS-200 and MS-201 but they should be replaced by MS-203 if they are not mistaken that I saw in the Roadmap for 2021.

Yes i agree, the MS-20x version is the new, Exchange Online centric exam. While the MS-200/201 were the initial offerings (MS-202 as transition exam from the 70-345), there are plans for the MS-203 as the next, 1-exam version.
