A stand alone payload is basically a script or compiled program that does the malicious thing you want the target to do. MSFVenom is a common tool used to generate all kinds of payloads. For instance you may have access to the administrative portal of an Apache Tomcat server. You can then use MSFVenom to generate a stand alone payload as a .war file and upload that to Tomcat to then execute a reverse shell connection back to your attack machine's netcat listener.
That .war file created by MSFVenom is a 'stand alone payload'
