I wanted a bit more of an explanation about how IPv6 addressing works. How are the addresses assigned and classified?

The IPv6 addresses are assigned in the same manner and some addresses are self-assigned by devices too.
There are no real classifications that are analogous to the IPv4 Class A, B, and C addresses. There are functionally different addresses. There are
- Globally Unique
- Link Local
- Unique Local
- Multicast
- Tunneling
- Unspecified
etc.
