Will you guys be making a Az 800-801 course?

Hello Junior,
At this time Az 800 -801 are not on our roadmap as full courses, however, many of the skills of administrating on prem, hybrid and cloud environments are addressed in our catalog through Hands-on skills courses. Specifically, Mike Rodrick's Hands-on PowerShell and the currently in production Windows Admin Center Skills would be a good start.

I'm also very interested in az800/801 finally something that may be MCSA/E like. But combines on-prem/cloud server/AD/GP/DNS/PS/IIS/DHCP etc.
It would be really great to have virtual labs to simulate this on-prem/cloud hybrid

Also I know you don't offer AZ-800/801 but which would you do 1st then AZ-800/801 and then AZ-104 after or AZ104 1st then AZ-800/801
