I've watched lots of courses presented by Justin Dennison. He keeps talking about his experience with MongoDB. I think he should create an introductory MongoDB course. MongoDB is by far the most popular NoSQL database. Since he already knows MongoDB, I think the ramp-up time would be quicker than for many other courses.
There are official MongoDB certifications that ITPro.TV could create courses for if you want to get fancy, but just a basic introductory MongoDB course would probably not take Justin much time at all.
I think a potential cloud-computing complement to a MongoDB course would be an AWS DocumentDB course, since it's my understanding that AWS DocumentDB is a MongoDB clone.
