Just started this course and i have a quick question. With regards to the 2 tier Spine and Leaf configuration, is there a Cisco recommended limit to how many nodes you can have at each layer?

There is no upper limit here but the physical hardware (i.e. number of ports). As long as you can have a full mesh between spine and leaf nodes, you can keep adding...of course each leaf node would need to use a certain number of ports for actual devices.
The minimum would be for at the least for redundancy, fault tolerance and high available. So you could not have a Single Leaf to a Single Spine node.
