Does VHD (X) type and size determine at all how large a checkpoint is?
Like will a 100GB Fixed have a larger checkpoint than a 100GB dynamic?
I assume not since the checkpoint is a separate file, but I can't seem to get consistent checkpoint sizes in my home lab. I assume the amount of Ram assigned and how many changes I make to the VM has more of an impact on the checkpoint size correct ?

Not necessarily. The VHD when you shutdown the machine you save the changes. If you make a checkpoint, the size is normally just the difference between the last time you saved vs when you just created the checkpoint. If you make a checkpoint while the VM is running, normally this will make your checkpoint size larger than if you shutdown the VM first because it has to save whats in RAM and paging file too.
