Does anyone have experience or can you point me to information on 'x .local" domains.

What specifically are you looking to do? Traditionally, the .local is so that you don't allow your domain name to be routable. Willing to try and help with a little more information to understand what is your scenario.

This is a good article - http://www.mdmarra.com/2012/11/why-you-shouldnt-use-local-in-your.html
The biggest issue I've had with .local domains in the real world is that you can't buy a trusted 3rd party certificate for a server running things like Outlook Web Access so people's browser's and phones give warnings when you try to connect. I also don't believe you can rename a domain later if it has an Exchange server so you are stuck unless you are prepared to later do a cross forest migration or something similar to create a new domain for your organization.
Keep this in mind if you are creating a production domain. Although you may just be curious or are setting up home labs and none of the above affects you.
